The whole is greater than the sum of its parts

As each block ripens, we hand-pick selected rows at the precise moment when flavour, acidity and structure are in balance.

Each clone is processed separately, then matured in a combination of seasoned and new French oak hogsheads and barriques before blending. This allows each parcel to speak clearly before becoming part of something larger.

Fruit for our traditional method sparkling wines is picked first, from reserved sections of the Pinot Noir and Chardonnay blocks. Only the finest free-run juice is selected for our limited-release Special Blend, which is kept on lees for up to three years.

Pinot Noir and Chardonnay for table wine follow. Each clone is fermented separately, giving us the opportunity to create limited-release single-clone bottlings, while also building the detail, structure and complexity of our Estate and Special blends.

At the end of vintage, as the autumn weather cools and the fog begins to settle, Nebbiolo is finally ready in the northernmost block. First for Rosato, then for more muscular, structured and tannic red wines.

Our 2025 vintage was experimental, with only a small amount of Pinot Noir — clones 115 and Abel — and Chardonnay 96 picked. These wines were made in tiny volumes for museum and reference purposes only.

The 2026 vintage is our first commercial release. It gives us the opportunity to understand the vineyard’s early potential and fine-tune our processes. For now, we have decided not to make Nebbiolo ourselves. Instead, we are selling the fruit to support our focus on Pinot Noir and Chardonnay while the Nebbiolo vines move through their “restless years”.

Despite working with only three varieties, the vineyard offers a remarkable range of possibilities. From mid-2027, the following wines are planned for release.

With time, as the vineyard slowly develops and matures, we may release further limited bottlings, including additional single-clone wines, Pinot Noir Rosé, Pinot Noir and Chardonnay traditional method sparkling, Nebbiolo Rosato, and a rustic, full-bodied Nebbiolo table wine.

We are proud that a number of small producers have already chosen to work with our fruit. We hope to continue these relationships, and build new ones, for many years to come.
